The seed of On The Menu started at a kitchen table over a cup of tea and homemade pastry. Since 2004 we’ve helped more than 300 clients across the U.S. and beyond.
Rebekah Spetnagel, MSS, RD
As a recognized nutrition expert and founder of On The Menu, Rebekah has helped hundreds of restaurants and food manufacturers understand their customers’ dietary needs and grow their businesses. She is a registered dietitian with over 30 years of experience and advanced training in marketing communication. This powerful combination of business savvy and technical expertise ensures that her clients successfully negotiate the science of nutrition, evolving regulations, and food safety to best serve their customers.
In addition to being invited to speak nationally, Rebekah was named Colorado’s 2016-2017 Outstanding Dietitian of the Year. She’s a member of the Academy of Nutrition and Dietetics, the Colorado Academy of Nutrition and Dietetics, and she serves as the Executive Director of both the Colorado and Texas Academy of Nutrition and Dietetics. In addition, Rebekah is certified in Restaurant Menu Labeling by the American Academy of Nutrition and Dietetics and is ServSafe certified by the National Restaurant Association.
Rebekah enjoys rowing, cross-country skiing, and yoga. When she’s not on the go, she loves to spend time watching movies and reading and is always happy to share her favorites in both categories. Her grown children enjoy her skills as a short-order cook and hardly notice they’ve been carefully trained to enjoy real food with the least amount of processing possible. Rebekah holds a B.S. in nutrition and food science from Colorado State University and a Master’s in marketing communication from the University of Denver.
Julie Fathy, MBA
As a founding partner, nutrition consultant, and seasoned business executive, Julie has helped hundreds of On The Menu clients effectively position their products and expand their businesses, all while ensuring they adhere to precise guidelines and complex FDA regulations. Her deep industry knowledge and passion about the business of nutrition gives restaurants and food manufacturers the edge they need to successfully compete in a crowded marketplace.
As an invited speaker and nutrition expert, Julie has served on conference panels and delivered talks that engage and inform. She serves as the Executive Assistant for the Colorado Academy of Nutrition and Dietetics and is a member of Slow Food International. Julie has her B.A. in speech communication from the University of Maine and her Master’s in business administration from the University of Denver.
Along with her husband, Julie is raising three children, two teenagers and a toddler. She is a passionate environmentalist and treasures her time outdoors with her husband and kids hiking, skiing, camping, mountain biking, and trail running. At home, Julie is often found in the kitchen cooking from scratch using local ingredients or creating her latest all-natural cleaning and body care products. She ends most days with a book in hand.
Diane Moyer, MS, RD
As a registered dietitian for more than three decades, Diane has worked in all areas of clinical dietetics, specializing in allergens, compulsive eating disorders, and celiac disease. She serves as the official dietitian to the Denver Metro Celiac Sprue Association, where she also chairs the medical education committee.
Diane earned her bachelor’s degree from the University of Rochester and a master’s in nutrition from Colorado State University. She completed her clinical training at the University of Wisconsin Hospital and Science Center in Madison, Wisconsin. Diane has taught at both the University of Denver and Metropolitan State University, and speaks on a variety of nutrition topics including celiac disease and eating disorders.
As a nutrition consultant, Diane has worked at On The Menu for more than three years. She is a voracious reader and dedicated rower, who frequently can be found at the Cherry Creek Reservoir in the early hours of the morning. Hired her for her unparalleled expertise in the science of nutrition, Diane has taught On The Menu staff and clients much more than they expected, including that one can make a tasty, gluten-free birthday cake out of vegetables, exotic spices, and other surprising ingredients!
Erica Gradwell, MS, RD
From sales to software development and testing, Erica’s extensive food service management experience combined with her extraordinary passion and training has ensured the success of restaurants and food manufacturers for decades. A registered dietitian since 1993, Erica holds both a B.S. and M.S. from Cornell University.
Erica is an active member of the Academy of Nutrition and Dietetics and the Colorado Dietetic Association, where she has held several volunteer leadership roles and served as its licensure chair. She has also taught food service management and food science courses at the University of Northern Colorado.
When not at the office, Erica and her toddler son can usually be found building with Legos, reading, swimming, and cooking. Together, they have become rather adventurous when decorating pizzas and mixing cake batter! Erica also loves to bike, hike, and read cooking magazines, and is more determined than ever (some might say obsessed) to find the perfect chile relleno!
